Red, White, and Blue Parfait

With Fourth of July celebrations taking place across the country this weekend, why not have your child get in on the fun and make a delicious snack that could also be used for a healthy dessert?  Red, white, and blue parfaits require only ingredients, and only a few minutes to put together.

To begin, you will need vanilla yogurt, blueberries, and strawberries, raspberries or both. (You can use fresh or frozen, but fresher berries will be more flavorful, and you won’t have to wait for them to thaw.)  If the strawberries are large, quarter or slice them before giving them to your child.  You can make the parfait in one large, clear container or prepare individual servings in clear, plastic cups.  (As long as I have refrigerator space, I prefer the second method because they are easy to hand to out, and children love having their own, individual serving with all three colors neatly in order.)

Have your child add blueberries to the containers to create a layer of blue on the bottom.  Next, he should spoon on a nice, thick layer of vanilla yogurt right over the blueberries.  Finally, add a layer of strawberries to the top.  Voila!  You have a healthy snack that kids will love to look at and love to try!
